VAIL — On Wednesday, Ludwig's hosts a winemaker dinner with Melville Winery. Wines will be paired with Executive Chef Steve Topple's dishes. Ludwig's Sommelier Jarrett Quint will join with Melville Winery to create the pairings.
“We have uniquely paired wild game dishes to serve with Melville's amazing wines which will make for an outstanding dinner,” Topple said.
The menu and wine pairing is as follows: Grapefruit, goat cheese salad with mache paired with Melville Chardonnay Estate; orange niargi ceviche with lime chutney paired with Melville Chardonnay; lamb belly with pickled cucumber relish paired with Melville Pinot Noir, Estate; pancetta-wrapped kangaroo loin with French green lentil stew and black trumpet mushroom sauce paired with Melville Samsara Syrah. Finally, for dessert, cherry-valrhona mille feuille cake, nougat mousse with vanilla brandy foam paired with Melville Pinot Noir Estate Verna's.
