Owner reinvents Wolcott Yacht Club

The Wolcott Yacht Club has always been an entertaining place. Now it's an entertainment place.Jan Marie Jouflas is reinventing her Wolcott Yacht Club with themed dinner events. Everything goes together: music, food, cocktails and even Vivian VaVoom."We have redesigned our inside space to create a more functional and comfortable atmosphere," Jouflas said.Chef Michael Joersz, longtime local and former executive chef of Balata in Singletree, is on board. The interior was totally redesigned and remodeled for the winter.They're still open for breakfast, lunch and dinner - and you need to put the sheepherder's skillet breakfast on your bucket list.But the theme nights are the latest twist. They opened last week to a packed house sampling Joersz' menu and wine pairings.A Denver-based jazz ensemble played and Ms. VaVoom performed what may be the world's most tasteful PG burlesque act.

The remodeled Wolcott Yacht Club is like a reunion. You're likely to see people you know and they might just be gathered around a big, round table that was the Jouflas family table. The kids gathered around that table their entire lives. It might be the perfect place for a Blackberry Sage Smash with Breckenridge Bourbon. If you're a beer drinker, you're required to try Mama's Little Yella Pils.Their big dinner entre plates, such as the charred beef tenderloin with eggplant "guac" and Colorado lamb lollipops are served tapas style. Emily Post says it's OK to eat with ribs with your fingers, so feel free. The tapas style servings range from $5-$15.They know about lamb in Wolcott. The Jouflas lamb roast is the valley's longest-running annual tradition - 101 years last August.The family ran one of the nation's largest sheep ranching operations. At its peak, the ranch ran more than 20,000 head of sheep on tens of thousands of acres.
