Everything you need to make a healthy, organic meal is available Sundays from 10 a.m. to 2 p.m. at the Edwards Winter Market at Colorado Mountain College (CMC). To give you some culinary inspiration, market intern and culinary student Andrew Cohen will demo how to grill the perfect grass-fed steak and compose a spinach salad - using market ingredients - at noon.
Cohen will compose a spinach salad with fresh organic spinach and tomatoes from Osage Gardens, a New Castle farm, and top it with garlic feta from Jumpin Good Goat Dairy from Buena Vista. Then he'll show you the professional way to make vinaigrette, perfectly emulsified every time.
The next demo features organic, grass-fed steak from Colorado River Ranch. Cohen will teach you a simple marinade and how to grill sear it. It's an opportunity for those new to grass-fed to taste the difference between corn-fed beef.
Armed with recipes for a romantic Valentine's Day dinner, shoppers can take the easy way out for dessert and purchase one already made by our vendors, like fruit pies from Magpies or Green Pastries from JaJa Belles.
The market will raffle off a basket Sunday filled with vendor items, like smoked salmon, wild salmon, cheese, bath salts, pasta, jerky, wine, chocolate toffee and more, just in time for Valentine's day. You must be local to win, but not present to win. Come to the market and enter your chance to win.
Next week, on Feb. 17, Todd Rymer head of CMC's culinary program, will teach shoppers how to prepare kohlrabi three ways: braised with greens, sauteed with onion and spinach and in a salad with fennel. Demos will take place at 11 a.m., noon and 1 p.m.
