ABOUT THE CHEFS
Named Outstanding Chef by the James Beard Foundation in 2011 and recognized by Time magazine on the “Time 100” list of most influential people in the world, Andres is a culinary innovator, passionate advocate for hunger issues, author and TV personality.
Matsuhisa is a celebrity chef and restaurateur known for his fusion cuisine, blending traditional Japanese dishes with Peruvian ingredients. In June 2009, Matsuhisa was presented with an award from the Japan Society for his achievements in food culture. Four of his restaurants have received Michelin stars. He was born in Japan and worked at the restaurant Matsue Sushi in Tokyo for seven years before he was invited by a customer who was a Peruvian entrepreneur of Japanese descent to open a Japanese restaurant in Peru.
In 1973, at age 24, he moved to Lima and opened a restaurant in partnership with his sponsor. He was unable to find many of the ingredients he took for granted in Japan and had to improvise, and it was here that he developed his unique style of cuisine, incorporating Peruvian ingredients into Japanese dishes.
Today, Matsuhisa is responsible for two restaurant brands, which encompass 25 restaurants, his family-owned Matsuhisa in Beverly Hills and Matsuhisa Vail, Aspen, Athens, Greece and Mykonos, Greece.
