Entries now being accepted for Healthy Lunchtime Challenge

Children ages 8-12 in Eagle County are invited to create healthy, affordable and tasty original lunch recipes as inspired by first lady Michelle Obama’s “Let’s Move” initiative.
Inspired by his participation in the 2013 White House Kids’ “State Dinner” hosted by first lady Michelle Obama this past summer, Epicurious Healthy Lunchtime Challenge winner, Nicholas Hornbostel, 8, is teaming up with lauded chef Kelly Liken and Sowing Seeds, a Colorado-based edible schoolyard garden enrichment program, to create a local Eagle County Healthy Lunchtime Challenge. The challenge aims to raise awareness of the first lady’s “Let’s Move” initiative, of which Liken is the local Eagle Valley representative, while also promoting healthy eating habits and the principles of sustainable agriculture among school children.
Nicholas was invited to attend the White House Kids’ “State Dinner” following his participation in the Sowing Seeds summer camp and triumph in the Epicurious Healthy Lunchtime Challenge for his sushi salad recipe.
Along with the additional support of Nicholas’ school, Edwards Elementary, The Eagle County Healthy Lunchtime Challenge is open to all children ages 8-12 living in Eagle County to create and submit an original lunch recipe. Each recipe must adhere to the USDA’s MyPlate guidelines (available at www.choosemyplate.gov) to ensure the criteria of a healthy meal are met. Entries must represent each of the food groups, either in one dish or as part of a lunch meal, including fruits, vegetables, whole grains, lean proteins and low-fat dairy foods, with fruits and veggies making up roughly half of the plate or recipe.
Recipes will be received until Nov. 1 via email or in person at Edwards Elementary. All recipes must be accompanied by a drawing or a short essay written by the child about their recipe. Ten finalists will be chosen by a panel of judges on Nov. 5 to then participate in a cook-off at Edwards Elementary, taking place on Nov. 11, where three winning recipes will be chosen by a panel of judges. On Nov. 15, the three winning children and their parents will be joined by local officials and notable residents at Restaurant Kelly Liken to celebrate with their very own version of the “State Dinner,” hosted by Nicholas and celebrated chef and proponent of the initiative Kelly Liken.
