Maple syrup purveyor returns to Vail, Minturn

Maple syrup is a golden elixir distilled from the sap of maple trees found only in northern temperate zones at lower elevations. Because it is a rarity in Colorado, maple syrup entrepreneur Tim Burton has partnered with the Breckenridge Distillery in Summit County to bring a one-of-a-kind syrup to local farmers markets for the next few weeks only.
Burton will sell his syrup on Saturday and Aug. 31 at the Minturn Market. He’ll also have a booth at Gourmet on Gore in Vail Aug. 31-Sept. 2.
Burton’s Maplewood Farm is known for barrel-aged syrups, using oak barrels from bourbon, rum, brandy and other aged liquors to infuse the flavor of the spirit into his gourmet syrups.
“We tap our trees in early spring at our maple grove near southern Indiana’s Hoosier National Forest and distill the fresh sap into syrup. Then we age it in oak liquor barrels for six months or more,” Burton said. “This gives our syrups remarkable flavors, enhancing the essence of the tree sugar with the spirit of the spirits.”
Last year on a trip to Eagle and Summit County, Burton picked up some well-used bourbon and rum barrels from the Breckenridge Distillery and filled them with his 2012 vintage syrup. Now that the syrup has aged, he has decanted the amber treat into bottles and returned to Colorado to share the limited-run syrup at several Colorado outdoor markets.
Tim Burton’s signature aged syrups have such a unique and delicious quality that they have become a favorite of America’s top chefs including Wolfgang Puck; Rick Bayless, of PBS’s “Mexico, One Dish at a Time;” Stephanie Izard, winner of “America’s Top Chef;” and Brennan’s, of New Orleans.
While in Colorado, Burton will also visit Leopold Brothers Distillery in Denver to select some barrels used to age its unique blackberry whiskey.
