Meet ‘Ski Town Soups’ author at Gorsuch in Vail Village

VAIL — More than 100 recipes from nearly 100 master chefs are revealed in this photography-heavy, travel cookbook "Ski Town Soups," authored by Vail resident Jennie Iverson. Among the award-winning and acclaimed chefs featured in the book are those who have appeared on such TV programs as "Hell's Kitchen," "Top Chef Masters" and "Iron Chef America."
Iverson will sign copies of the cookbook at Gorsuch in the Vail Village on Saturday from noon to 3 p.m. The book signing at Gorsuch takes place at the same time as Gourmet on Gore, a culinary festival offering an open-air tasting of culinary delights from Vail's top restaurants, creating a perfect venue for food enthusiasts.
"Ski Town Soups" is a 226-page, photographic-rich hardcover book celebrating the best soups from America's top ski town chefs, including many from the Vail Valley. It showcases pureed soups, chowders, bisques, stews, chilies and hearty soups such as rock shrimp gazpacho and Colorado baked potato avalanche soup, both from Rocks Modern Grill in Beaver Creek. Then there's the classic Chophouse Chili from Vail and Beaver Creek Chophouse, spiced rum spiked acorn squash soup with gorgonzola and toasted pecans from Restaurant Kelly Liken, and celery and leek potage with glazed short rib, lentil du puy and Tuscan oil from Larkspur in Vail.
A ski culture enthusiast, Iverson and her family moved to Vail to enjoy outdoor living in a mountain community. Iverson is dedicating a percentage of the proceeds from the sales of the book to the Sowing Seeds Program, which is a project of the Vail Valley Foundation's Youth Foundation. This program works with schools to integrate gardening into their curriculum, thus incorporating fresh produce into the school cafeteria. Ultimately, this connects children to the environment, fosters understanding of the origin of food and teaches responsibility through hands-on activities, such as planting. Many of the flavor profiles in the cookbook originate from locally sourced ingredients, which are very close to the hearts of those who contributed to the book.
