Vail’s Four Seasons to host mushroom dinner

VAIL — Four Seasons Resort & Residences Vail has announced that renowned mushroom expert Larry Evans is returning this year to host a seminar on the local fungi followed by a mushroom-inspired reception and dinner.
This mushroom dinner event with Evans is a spin-off of the resort’s ever-popular Mushrooms & Mercedes series. To welcome participants, the seminar will focus on local mushroom classification and the diversity of the fungi used in food.
This will follow with Executive Chef Jason Harrison’s mushroom-themed meal featuring a four-course dinner that will make guests rethink how to use mushrooms in their everyday cooking.
The inventive menu includes a wild mushroom toast on rye bread crostini; a pan-seared Colorado bass with wild mushroom and white bean ragout in a dashi broth. Mushrooms are not the only focus for Harrison — he also incorporates the local and fresh ingredients in all of his dishes.
“Colorado offers amazing indigenous ingredients and a huge variety of mushrooms that we are excited to showcase with expert Larry Evans in this specialized culinary event,” said Annette Whittley, director of food and beverage of Four Seasons Resort & Residences Vail.
Participation in the mushroom seminar and dinner is $125 per person. The seminar is from 3 to 4 p.m. followed by the dinner at 6 p.m. in Flame Restaurant’s private dining room, Out of Bounds, on Aug. 8 and 9.
