Witness Tree Winery brings their varietals to the table

VAIL — Sonnenalp Hotel’s Winter Wine Dinner series ends Friday with a dinner showcasing Witness Tree Winery. The wine served will be selected by head sommelier Jarrett Quint and the menu will be hand-crafted by Executive Chef Florian Schwarz.
Named for an ancient oak that stands tall on the vineyard, Witness Tree is a small producer of premium pinot noir and chardonnay made entirely from grapes grown on the 100-acre estate. It stresses the importance of minimal handling and low yields in the vineyard to create wines filled with depth, elegance, concentration and character.
WINE AND FOOD PAIRINGS
Schwarz has taken the time to carefully choose each ingredient and menu item to pair perfectly with the wines selected. The meal begins with butter poached Antarctic butterfish with fennel, mushrooms, pear and basil ice cream, paired with a 2011 Stand Sure Vineyard pinot gris.
The next course is a crispy duck spring roll with Asian vegetable and cassis sauce accompanied by a 2010 Hanson pinot nior.
The third course is a seared buffalo tenderloin with quail egg, celery puree and truffle sauce paired with a 2010 Vintage Select pinot nior.
And lastly, dessert will offer puff pastry rolls filled with vanilla mousse with red fruit jelly and chestnut ice cream, paired a 2011 estate pinot nior.
The Witness Tree wine dinner is $95 per person, not including tax or gratuities. The reception begins at 6:30 p.m., followed by dinner at 7 p.m. Reservations are required and can be made by calling 970-479-5429.
