What goods or services do you provide? Colorado Meat Co. is a full animal butcher shop. We provide beyond organic Colorado beef, pork and lamb. All animals are pastured on native Colorado grass lands in Meeker. All animals and their lineage have been verified to never have hormones, antibiotics or steroids given to them. We provide a product that you usually only get from a designer restaurant and want to make that quality of meat available for everyone.
What’s new or exciting at your place? We are one of very few full animal butcher shops in the country — it truly is a lost trade. We cut all orders custom, on the spot! Come and check the action out from the large window looking into our work room.
What strategy do you use to differentiate your business from your competition? We feel that our business sets the standard for meat. We are receiving our product on a weekly basis and know our source and USDA-certified facility owners. To uphold this we did not install a freezer and will work with local charities if anything nears its shelf life. We are proud to give our community the freshest and finest product available.
What philosophy do you follow in dealing with your customers? What can your customers expect from you?
Our customers can expect a consistent, delicious product and an “anything you want” answer. We can do that because we are a full animal butcher shop. We don’t believe in waste, so we utilize all of the product. Brittany and I are excited new business owners and so grateful to be in Avon and to serve the Vail Valley, so you better expect to see some smiles and happiness!
Tell us a little about your background, education and experience: I (Chris) worked as the general manager at Porter Road Butcher in Nashville, Tennessee, for five years. During that time I truly fell in love with my trade and want to do this for the rest of my life. I had wonderful experiences while there including a butchering demonstration at the Atlanta Food and Wine Festival and a sausage-making demonstration for the Nashville Herb Society — sausage is my specialty. I moved back to the Vail Valley to be with my partner, Brittany. She has worked in Vail Village for the last 13 years as a luxury retail manager and stylist. She has made this business happen. What is the most humorous thing that has happened at your business since you opened? Well, I guess that you could take a step back from our build out (that we did ourselves) and the big hurdle we faced in the first day of business (a theft) and just laugh. Bumps in the road are life and you cannot take it too seriously. We are not promised tomorrow, so smile and laugh, laugh, laugh! We hope that things really get more slapstick funny soon!
