What goods or services do you provide? We provide premium coffee and espresso drinks. Our menu includes fabulous breakfast pastries, bagels, daily soups, fresh salads, and Chef Ryan’s own specialty sandwiches and wraps.

What strategy do you use to differentiate your business from your competition? The Red Canyon Cafe is conveniently located in the heart of Eagle. You can pick up a quick picnic lunch or stay and chat over lattes; our outdoor seating is perfect for those first warm spring days. We are also the only cafe in the area to serve Allegro coffee, a gourmet, eco-friendly bean roasted here in Colorado but distributed nationwide through Whole Foods markets.

What philosophy do you follow in dealing with your customers? What can your customers expect from you? We are fortunate to have the customer base we do. Being downvalley, we see fewer tourists and more regulars. Over the past year, our customers have become a sort of small-town second family. Seeing the same faces every day makes it easy to provide friendly, personalized service because we often know what drink or sandwich to make even before the order is placed.

Tell us a little about your background, education and experience. Ryan is a formally trained chef who has worked in fine dining around the valley for almost a decade. After a couple of years as a personal chef, he decided it was time to branch out on his own, and the Red Canyon Cafe was born.

What is the most humorous thing that has happened at your business since you opened? A customer stopped by before we were open in the morning and asked if he could change out of his running clothes before getting coffee. Since the staff was all in back, he chose a quiet corner of the dining area instead of using the restroom; imagine the surprise of the next group of early-morning coffee-seekers upon being greeted by a half-naked jogger!
