Manor Vail Lodge announces new exec chef

VAIL – Manor Vail Lodge has a new Executive Chef, Weston J. Schroeder. With his extensive experience in the world of culinary arts, Schroeder adds knowledge and new finesse to the Manor Vail Lodge Culinary team. Schroeder has a strong background in fresh seafood, modern American cuisine, regional Italian cuisine, and creative menu development. Now a Vail Valley resident, Weston is finding new ways to infuse his technique and style into the Colorado western theme.Originally from Kansas City, Missouri, a barbecue capital, Schroeder started out in the culinary world at an early age. A prep cook in local Kansas City restaurants as a teenager during summer and after school, Schroeder always knew that he wanted to be a chef. His parents used to say to him, “you are a natural in the kitchen.” After high school Schroeder went on to pursue a college degree on a full scholarship for baseball at Iowa State, and then onto finish at Missouri Western State University with a business commercial arts degree. Not more than two weeks after college Schroeder enrolled at Johnson County Culinary Arts school to pursue his culinary degree. He continued his education by attending the Culinary Institute of America in Hyde Park New York and received his certification of Pro Chef Level II through the American Culinary Federation. Prior to Manor Vail Lodge, Schroeder began his career in the fine dining world at the American Restaurant in Kansas City, one of the city’s top restaurants. He started his apprenticeship under Chef Celina Tio, who holds many great achievement awards such as “Chef of the Year 2005” by Chef Magazine and the “James Beard Award” in 2007. During his time at the American, Schroeder has studied and accomplished many goals as well. In 2006 he received his certificate of level one sommelier and also awarded “Chef of the Year 2006” by the Greater Kansas City Food & Wine Association. He continued his career with as the executive chef of the Pepsi Center in Denver, managing culinary operations throughout the venue.Now located in the Vail Valley, Schroeder will showcase his talents in The Fitz Lounge, Lord Gore Restaurant and banquets/catering kitchens of Manor Vail Lodge.
