Five-star chef opens Red Maple Catering with true luxury service

Chef Jason Harrison was most recently the executive chef at the Four Seasons in Vail. He now owns his own catering company, called Red Maple Catering.

VAIL — The cuisine of international chef Jason Harrison is now available to travelers, homeowners and event planners seeking a premier dining experience in Vail or beyond. Chef Harrison’s newly-launched Red Maple Catering focuses not only on delivering the most memorable food experience in the mountains, but also on true luxury service — whether it be in a private home, at a rental property, event venue, or via personal delivery.

Over the course of 20 years, Chef Harrison’s culinary expertise was refined at prestigious locations bearing such names as Four Seasons, The Ritz-Carlton and Bellagio Las Vegas. His background also encompasses a deep knowledge and appreciation of local, Colorado-sourced ingredients, and of their powerful appeal to international travelers.

“Our clients are coming to a place where, within 150 miles, we have some of the best game, beef, pork and poultry in the country, as well as artisan cheese makers and amazing heirloom organic produce growers,” said Harrison, who calls the Vail area home. “We even use Colorado-bred Wagyu beef raised just minutes away, and early clients are raving about this and the other spectacular ingredients they are able to enjoy here in the mountain region.”

Red Maple Catering serves groups from four to 150 people, and in many different formats. Harrison and his team can provide everything “in” — as an in-home private chef experience preparing and serving a sit-down breakfast, lunch and/or dinner. The company also caters events such as après-ski receptions with passed hors d’oeuvres, or private parties and celebrations taking place in high season or at any time during the rest of the year. Regardless of the occasion, Red Maple’s menu pays homage to “The Rocky Mountains Reimagined,” as Harrison has long loved to put his creative spin on the rich bounty of products available in Vail Valley. His signature selections include Colorado-striped bass with sweet corn and lemongrass pudding, Great Plains bison and ricotta meatballs with basil pomodoro, Rosen Farms lamb ramen, Boulder-farmed berkshire pork porchetta with truffled Carolina barbecue sauce and lasagna with venison, bison, heritage breed pork and three Colorado cheeses.
