Best Fine Dining (Avon/Eagle/Eagle-Vail/Edwards/Gypsum/Minturn) — Best of Vail Valley 2019
Juniper Restaurant has reigned as the epitome of fine dining in Edwards since it opened 17 years ago. From the warm greeting at the door to the perfect cappuccino before departing, the experience at Juniper feels like a well-choregraphed dance. And while the steps remain the same, each visit feels like you’re watching a new performance.
Part of the effect is achieved by the stellar staff. Some started when the restaurant opened, said owner Doug Abel. Some of the guests have been regulars since then, too.
“Familiarity is important,” Abel said. “People are comfortable when they come in.”
Seasonal changes to the menu keep guests on their toes and Abel said that these tweaks to the menu, based on the freshest and most in-season ingredients, is important for the chefs, too.
Though each person defines fine dining differently, to Abel it’s simple: “It’s everything, from the minute you walk in the door or even when you make the phone call to make a reservation, to the minute you walk out the door —the entire experience is as good as it possibly can be.”
