VAIL — Now through October 2017, Four Seasons Resort and Residences Vail will offer visitors a Colorado gastronomic experience, as part of the new Four Seasons Taste of Place global initiative. Taste of Place features a curated collection of culinary experiences that invites visitors and local gourmands to step behind the scenes and take a look at the resort’s diverse local culinary practices, traditions and experiments.

The Farm to Flame itinerary begins with a private helicopter ride to 7X Ranch in Hotchkiss, where Flame restaurant, the resort’s modern mountain steakhouse, sources its signature beef. Raising 100 percent full-blooded, Japanese cattle on the Western Slope of Colorado, farmers at 7X Cattle Co. follow specific, sustainable guidelines to achieve extreme marbling and tenderness.

See an aerial view of 7X Ranch as Chef Marcus Stewart points out aspects of the farm and its special connection to Flame restaurant, and then land in Aspen and head to a local restaurant for an après lunch with 7X owners and representatives to chat firsthand about the farm and the 7X experience.

After lunch, be whisked by a chauffeur to Woody Creek Distillers in nearby Basalt for a cocktail journey and tour. The distillery grows and sources produce locally and distills every spirit in custom Carl stills. Afterwards, hop back aboard the helicopter and head back to the resort, where a gift of 7X gear and Flame’s signature spice rubs awaits.

The tour concludes with an intimate dining experience at Flame’s Chef’s Table, holding court right in the kitchen. Stewart’s meal will focus on the different preparations of some signature appetizers, as well as 7X steak. Finally, shipments of 7X beef will be sent to each tour attendee’s home throughout the year to be reminded of this culinary journey.
