Menu highlights

Cut specializes in Colorado pasture-raised beef, lamb, and free-range chicken—each offering is top quality, with steaks like the New York strip being our favorite. The seafood selection is the best we’ve found in the valley, featuring cod, grouper, trout, and both wild and farm-raised salmon. Everything is impressively fresh and of the highest standard. The cheese selection is extensive and thoughtfully chosen. A pro tip: On Friday and Saturday don’t miss the sushi-grade tuna, in bite-sized pieces marinated in a delicious Asian dressing — it’s a perfect 10. For convenience, Cut also offers a wide range of prepared and frozen foods, including house-made burgers, Wagyu hot dogs, seasonal soups, pastas, and prosciuttos.

Staff

The team at Cut is passionate and highly knowledgeable about food. The shop is led by owner and local restauranteur Casey Glowacki, who also runs the Drunken Goat, Wild Sage and Capitol Public House. The staff includes friendly and experienced butchers and fishmongers such as Dan Kent, Jennifer Steeves and David Nowakowski. Their expertise shines through — the staff members are always happy to answer questions and can prepare your order in advance if you call ahead.

Cut is located in the Edwards’ Corner strip, conveniently next to the Drunken Goat. The shop is neat, and clean, with a welcoming, efficient, and cheerful atmosphere. It’s clear that the staff take pride in their work and understand that customers are seeking the best in meat and seafood.
