Chef Matteo Salas, of Vail’s sister city, the 500-year-old community of San Miguel de Allende, Mexico, prepares a suckling pig while sous chef Anthony Salazar observes Thursday at Sweet Basil in Vail. “To share dishes, recipes and how we do things … it’s what makes you grow, and it’s really beautiful to have that exchange between San Miguel and Vail,” Salas said. Matt Morgan, managing partner with Sweet Basil, agrees. “It’s a huge thrill and honor, sincerely, for us because he’s a very rare talent and a fine human being,” Morgan said. Salas prepared his dishes for dinner service Thursday and Friday at Sweet Basil in Vail.
