Sushi is for lovers, and Eagle County loves Sato. The Edwards restaurant serves a variety of Asian noodle bowls, but raw fish takes top honors. “We have really, really good sushi and sashimi. Fantastic sushi,” enthuses Manager Kim Risi. Heads up: When you order plenty, it arrives in a boat.
Osaki’s in Vail is tucked just off of Meadow Drive, but low visibility doesn’t dampen local support. The intimate restaurant serves sushi and other Japanese cuisine. Gohan Ya in West Vail is also Japanese, with noodle and rice bowls. “Our most popular item is the yaki udon, thick noodles in a spicy sauce, pan fried,” says Shin Yamamoto.
