For 19 years the Marquez sisters have been serving New Mexican-style Mexican food in Edwards. The menu runs the gamut from tacos and burritos to carnitas and enchiladas. Everything is made fresh, from the chips to the gorgeous green chiles that top a myriad of treats. No matter what they do, they’ll always be famous for the white jalapeno sauce that comes with chicken, shrimp and ” if you hit it on a truly special day ” crab enchiladas. A couple months ago they opened a take-out counter in the space next door, making it a great grab-and-go spot. Burritos, tacos, tortas and baked potatoes all make for fast meals, but the rice bowls take the cake. Spanish rice is covered with that famous white sauce, then layered up with any toppings you request. jOle!
Agave’s charm starts with the handmade tortillas and salsa, and continues right through the tequila, tacos and flan. Actually, the Avon restaurant goes beyond stereotypical Mexican fare and delves into some of the regional treats that can be found south of the border, such as chicken and huitlacoche empanadas or paella diablo. Fiesta Jalisco has a restaurant in almost every town in Eagle County. With outposts in Eagle, Edwards and Avon, it’s no surprise they have a big following. The menu concentrates on the Pacific Coast, from Baja to Oaxaca.
