Freshies in Edwards epitomizes “think globally, act locally.” The one-stop organic shop sells produce, prepared foods, pantry staples and household items. When owners Delling and Andi Zing opened the shop more than 5 years ago their mission was to get the best organic foods from small organic farms. That hasn’t changed, but the scope of the organization has. “The whole idea of organic is to make life sustainable for us in the future,” Delling says. And he makes it tasty. Stop by for one of his vegan soups or lavender cookies, and check out the new crop of blood oranges while you’re at it.
Village Market isn’t as big as other supermarkets in town, but its shelves are consistently full of organic produce. Some Colorado farmers sell directly to the store.
The Edwards Farmers’ Market is the newest farmers’ market on the block, but it’s geared for locals to rush in and rush out. With on-site parking and more food than crafts booths, it’s easy to cruise through on a weekly big shop.
Chef Kelly Liken is on a first-name basis with many Colorado farmers. During the summer, she even features weekly Harvest Dinners at her Vail restaurant exclusively using produce and cheeses found at the Vail Farmers’ Market.
