Flown in daily, shipped UPS or Fed Ex, there’s no shortage of the freshest seafood at Montauk. They have between a dozen and 15 types of fresh fish at any given time.
Chef Dimitri Souvorin favors the Hawaiian Bigeye Tuna. They cook it up seven or eight different ways: seared, tartar, sushi rolls, etc.
“We really showcase that tuna,” Souvorin said.
