Bighorn Bistro

Daily Staff Report

4695 Meadow Drive, Vail Racquet Club

East Vail

The Room A vaulted ceiling and simple, wooden furniture create a modern,

elegant feel. Subtle touches, like Asian paper screen on the windows, add

decorative touches to the bistro while maintaining a light atmosphere. The

bubbling brook outside and Bob Marley playing in the background add to the

calming, serene atmosphere of Bighorn Bistro.

The Food

Like the decor, the food mixes Asian and Western cultures. You

don’t have to be a sushi fan to love the seared tuna soba nori roll with

wasabi sauce and ponzu. In the mood for richer, heartier flavors? The mini

beef Wellingtons with sweet potato poblano ravioli in a merlot demi glace

are perfection.

The Drinks

The knowledgeable staff easily recommends wine pairings from

their well-rounded wine menu for every dish they serve. The restaurant

also has a full bar.

Gotta try

East and West come together in the delicious rum-marinated

drunken pork chop with tamarind and plum sauce. The dish is served with

cashew fried rice, a delectable combination of egg, wild mushrooms, yellow

bell peppers, cabbage and basmati rice.

The restaurant’s location in a residential neighborhood gives you

the feeling of dining at a friend’s home.
