The Fiestas Express quick-service counter is right next door to Fiestas Caf and Cantina in Edwards Plaza. The additional space makes take-out more convenient.We offer our full service menu as we have for 19 years. In addition, we now have a chalkboard menu, a Party Portion menu and Grab and Go. Take it to go our sit and eat.The chalkboard menu features the familiar tacos, burritos, taco salads and tostadas. Some of our new items include rice bowls with your choice of Spanish rice or cilantro lime rice, baked potatoes, Mexican Tortas (sandwiches) and you can even get hot dogs! Inheriting the new space that used to be the ice cream store meant we also inherited some of the equipment to make espresso and other coffee drinks, shakes, slushies, and smoothies. The Grab and Go case lets you get your meal hot ready to eat or grab a cold item to heat when you are ready. This case is stocked with fresh salads, fruit cups, veggie cups, desserts, entrees, five different types of salsa, shrimp ceviche and much more.The Party Portion menu has your favorites in large quantities. Pick up a dozen chicken enchiladas and some rice and beans and you have your meal for 6 people. We also provide catering services, gifts, home-made tortilla chips and more. What strategy do you use to differentiate your business from your competition? Serving the best Mexican Food in the Valley since 1989 is no easy feat. We pride ourselves on our consistent recipes and quality food whether you take it home or eat in the dining room.Our recipes were brought to Colorado by our great- grandparents from New Mexico. We import flavorful chiles from the same farmer our grandmother used. We use only the freshest ingredients as we prepare our homemade food from scratch daily.What philosophy do you follow in dealing with your customers? What can your customers expect from you? We are so blessed to have such loyal customers who have dined with us for the past 19 years. They continue to rave about our food and how theyve tried other Mexican restaurants and still they love Fiestas style of cuisine. This is why our customers have voted us the Best Mexican Restaurant in the Valley year after year. We opened Fiestas Express for our customers to answer a need for a great-tasting meal whether you have five minutes or 55 minutes.We have been voted Best Mexican Restaurant in the Valley in the most recent Vail Daily Opinion Poll. Last year we were voted Most Consistent Restaurant Service. Weve been voted Best Service with a Smile and have received many, many awards for our food and great margaritas over the years. Nothing could make us happier, or more proud, than this recognition from our customers!Tell us a little about your background, education and experience. We opened the one-and-only Fiestas in this Edwards Plaza location in 1989. Well celebrate our 20th anniversary next year. We cant remember anything farther back than that but I guess thats 19 years of experience practicing and perfecting all the things we know are important to our customers.What is the most humorous thing that has happened at your business since you opened? For years customers have told us their stories of going out of town for vacation and when they return they cannot wait to come into Fiestas for their favorite meal. They explain its a craving and only our style of food can satisfy it. We call it the Fiesta Fix you just gotta have it!
