In one of Vail Village’s most idyllic spots, Blu’s claims real estate right along Gore Creek. Enjoy a seat on the terrace and watch the water rush by as children play on the adjacent lawn, or escape the heat and grab a butcher block table inside.
Get the day started with a kick and have a famous Bloody Mary. The smooth combination of tomato juice, vodka and spices is sure to get your blood pumping. Blu’s serves its extensive breakfast menu until 5 p.m., so you can get favorites like chili rellenos and eggs even when the sun is on its way to bed.
Never sacrificing flavor, Blu’s health-conscious fare is both mouth-watering and responsible. Try the perfectly grilled salmon on a bed of spinach and quinoa salad, accented with black olives, sun-dried tomatoes and red onion. Or sample the mahi mahi fish tacos.
Head chef Jason Latta has tweaked the menu since he arrived at the restaurant last December, but there are certain staples he dare not mess with. Dishes like the gypsy schnitzel and lamb souvlaki will remain always. New additions include the pan-fried pistachio encrusted trout and rotisserie duck, which comes in a sweet tamarind sauce.
With a heart
With most dinner entrees under $20, Blu’s is one of Vail Village’s most affordable dining options, but that doesn’t stop it from being generous to those in need. Owner T.J. Armstrong recently gave a group of inner-city tennis players half-priced meals so they could indulge in something other than McDonalds, Latta said.
