Chicken restaurant to open in West Vail

VAIL, Colorado – Yellowbelly, described in a release as a “quick, casual chicken restaurant,” will open in early November in the former Taco Bell space in the West Vail Mall.

“Our focus will be rotisserie and fried chicken with fresh side dishes,” owner Barry Davis said. “We like this location because it is visible from Interstate 70 and has easy access for locals as well as vacationers and those traveling through.”

Davis has been in the hospitality business for the past 20 years, most recently as the manager of Bol in Vail Village, where he worked with chef Eric Wuppermann. Davis and Wuppermann teamed up with Michael Friedberg, an entrepreneur and former member of the U.S. Ski Team. About a year ago the partners decided to create a new and chicken restaurant.



“There are many variations on the pizza and burger theme and we wanted to bring some fresh and creative ideas to the chicken concept,” Davis said.

“We will be using as much Colorado product as possible, our batter will be gluten free, and we’ll have a full complement of beer and wine choices,” Davis said.
