Colorado Wine Country visits Larkspur Restaurant

Larkspur’s Sommelier, Kevin Furtado, is eager to introduce the delicious, well-balanced wines of Canyon Wind Cellars at a special Winemaker Dinner on Friday and Saturday at Larkspur Resaurant. “It’s great to have a regional wine we are proud to pair with our cuisine. Canyon Wind Cellars has made big strides for the emerging Colorado wine industry,” Furtado said.

Canyon Wind Cellars, located in Palisade, Colorado, is ideally situated at the mouth of a long and narrow canyon. A crisp mountain breeze keeps the fruit cool as the grapes ripen in the hot summer sun. Norm and Ellen Christianson, along with their son Jay, are the producers of this award-winning Colorado wine. “We are a boutique winery, meaning our wine will always be handcrafted. We are also an estate winery, therefore we only bottle our own carefully cultivated grapes,” Jay said.Consulting winemaker Bob Pepi, of Napa Valley’s acclaimed Robert Pepi Winery, is an integral part of the Canyon Wind family. He has been making wine in California for over 25 years and is now consulting for wineries in Napa, Colorado, and Argentina.Larkspur Restaurant will offer food and wine lovers a special 5-course tasting menu featuring this local harvest for $65 per person on Friday and Saturday beginning at 6 p.m.Winemaker Jay Christianson, Executive Chef Mike Regrut and Sommelier Kevin Furtado will be an intimate part of the dining experience. Larkspur’s regular dinner menu will also be available.
