Comfort food at family prices in Eagle

EAGLE, Colorado – Don Bishop and Kelly Conley, owners of the broadway bistro restaurant in downtown Eagle, used to dream about owning their own place one day.

That dream is now a reality.

“Kelly and I have both worked in restaurants for many, many years – more than 20 years combined,” Bishop said. “About 10 years ago we started working together and started talking about owning a restaurant.”



Ironically, the nation’s economic downturn provided the impetus for their vision when both men lost their jobs. “So, we started pursuing our dream of owning a dynamic, family, neighborhood restaurant,” Bishop said.

Luckily for both men, their neighborhood is Eagle and a location was available. Bishop has living in the community for 10 years, Conley has been an Eagle resident for 14 years.

The broadway bistro is located in the heart of downtown Eagle in the former Broadway Cafe location. It’s been a popular local’s spot for years, and the pair plan to build on that foundation.

“We want to be the locals hangout,” Bishop said.

In that spirit, the bistro has a two-tiered menu – affordable sandwich options paired with other, more elaborate fare. But everything from the kitchen is designed to meet a single goal – reasonably priced, high quality food delivered in a pleasant, comfortable atmosphere.



“We kept some of the old favorites on our menu and we are exploring other avenues,” Bishop said.

His favorite addition to the menu is a veggie gnocchi with marsala wine sauce and a vegetable medley. Bishop said clients are giving rave reviews to the bistro’s beer cheese soup.

Bishop said the bistro’s food plays well in the historic building, which features antique woodwork and a pressed tin ceiling. But not everything is old-fashioned – a huge high-definition television has been mounted above the bar, making it a great spot to catch a game and enjoy a beer or cocktail.

Noting the bistro is still a work in progress, Bishop said the operation will continue to evolve over the weeks and months ahead. The bistro is open for brunch on Saturdays and Sundays, beginning at 10 a.m.
