Cordillera Lodge chefs serving Thanksgiving dinner in house or to go
CORDILLERA, Colorado Take a shortcut this Thanksgiving straight to the Lodge & Spa at Cordilleras Mirador restaurant for a dine-in meal, or Thanksgiving dinner to go. Mirador is offering two simple options for this great American celebration of kinship and bounty, and both include all of the trimmings, without any of the labor.
Enjoy a four-course Thanksgiving feast, featuring a choice of two soups, including Sarahs sweet potato bisque with goat cheese crostini, or roasted corn and pheasant chowder; a choice of two salads, including frisee and organic baby greens with medool dates, orange segments, shaved parmesan and toasted almond vinaigrette, or heart of baby romaine salad with Caesar dressing and parmesan cookies; a choice of four entrees, including: oven-roasted turkey with linguisa brioche stuffing, cranberry chutney, honey glazed root vegetables, garlic mashed potatoes and turkey jus; herb-crusted prime rib with pancetta potato lyonnaise, cipollini onions, baby carrots and rosemary cabernet jus; crab-stuffed Alaskan king salmon with grilled asparagus, roasted Yukon potatoes and chive beurre rouge; or maple and butternut squash risotto with mixed seasonal vegetables; and finally, a choice of three desserts, including pecan pie with oatmeal stout ice cream, pumpkin cheese cake with cinnamon whipped cream, or chocolate molten cake with eggnog ice cream and bourbon caramel sauce.In addition, the staff at Mirador will welcome all diners with a complimentary champagne or sparkling cider toast to begin the meal. Thanksgiving dinner will also include live entertainment from 3 to 7 p.m. in the resorts living room.This meal is $52 for adults and $20 for kids 5 to 12 years old. This multi-course feast includes a choice of two entrees: a 20-pound oven-roasted turkey with giblet gravy or a 12-pound herb-crusted prime rib with creamy horseradish and au jus (additional $75); a variety of accompaniments, including orange cranberry chutney, linguisa brioche stuffing, roasted garlic mashed potatoes, seasonal vegetable medley (green beans, carrots, cippolini onions), mixed garden salad and balsamic vinaigrette, and assorted dinner rolls; and a choice of two desserts, including pumpkin or apple pie.The meal is $175 for six people, with an added cost of $25 for each additional person.
