Ripe Colorado Produce and Batter Cupcakes are teaming up to bring you fresh, mouthwatering delicacies. The two local companies have joined forces to create the Ripe Cupcake of the Week, with a new flavor debuting every Friday. Using Ripe's Colorado-sourced fruits and herbs, the cupcake of the week is available exclusively at the Ripe produce tent in Edwards on Fridays from 10 a.m. - 6 p.m. and at the Batter bakeshop in Avon also on Fridays from noon to 6 p.m. The Ripe Cupcake of the Week will also be available at the Batter tent during the Vail Farmers Market every Sunday from 10 a.m. until they're sold out. This week's inaugural flavor is lemon summer berry â vanilla cake filled with handmade mixed summer berry compote, topped with lemon cream cheese frosting folded with fresh lemon curd.
