Dine Iron Chef America style in Vail

VAIL, Colorado –Beginning Tuesday in Vail, diners will have a chance to experience the dishes Kelly Liken created for her national debut on “Iron Chef America.”
Her May 9 appearance on the show revealed the “secret ingredient”: blue cheese.
“While blue cheese is perceived as a very strong flavored cheese, I was very excited to have the opportunity to incorporate this into a dynamic menu that represents my style of cooking,” Liken said.
Guests will have the opportunity to enjoy and discover the versatility of this distinctive cheese with a five-course tasting menu that will be available at Restaurant Kelly Liken when it reopens Tuesday. Wine Director and General Manager Rick Colomitz will create customized wine pairings for each course.
The menu will include:
• Butternut squash soup with crunchy apple salad and Roquefort croquette.
• Beef carpaccio with a cabrales and niçoise olive tapenade.
•-Tempura prawn with endive and blood orange slaw, creamy Maytag vinaigrette and fresh herbs.
• Spice-crusted pork tenderloin with cranberry chutney, cabrales blue cheese and gorgonzola dolce froth.
•-Asian pear and fig crisp with gorgonzola dolce streusel and balsamic frozen yogurt.
