Eagle coffee shop opening Vail location

Tara and Nate Picklo want to give Vail a Christmas present – a new coffee shop.

The Picklos, owners of Yeti’s Grind in downtown Eagle, are putting the finishing touches on a new Yeti’s, this one in the new Solaris building in Vail Village. The store will feature all the coffee and tea drinks available at the Eagle store, but will add beer and wine to the mix, too, for the apres ski crowd.

Tara Picklo said the shop also plans to have a “cookie hour” in the afternoon.

Picklo said she and her husband are both thrilled and nervous to open at Solaris, but said the store will be ready to serve up hot drinks by the bucketful. The Vail Yeti’s will have two espresso machines just like the big one in Eagle.

Picklo said part of her excitement for the Vail location comes from wanting to bring to Vail Village some of what the Eagle store has.

“I really believe coffee is community,” she said. The Picklos are friends of Barry and Pamela Davis, who own the Bol bowling alley in Solaris, and Picklo said her new Vail neighbors were impressed with the vibe of the Eagle shop.

“They wanted some of that for Vail,” Picklo said.

Barry Davis said he’s happy to have the Picklos as his new business neighbors. Solaris now has Bol, a coffee shop, an ice rink and retail shops either open or about to.

“We’ve got a whole little district right here,” Davis said.

Having opened two brand-new shops in just a few years, Picklo said she’s more confident with the shop in Vail, and is happy to have Yeti’s Grind stores as bookends for the valley.

“But we need to sell a lot of coffee,” she said.
