New coffee bar opens at Gypsum Recreation Center

Great coffee in Gypsum? It’s time.
Sip Coffee Bar & Eatery is officially open at the Gypsum Recreation Center. And here’s the best part … customers do not have to be members of the rec center to grab a cup of joe. The entire public, including non-members, are welcome to come chill out in the cozy furniture and enjoy the food and beverages offered by Sip.
“The name comes from the matriarch of our company – Karen Mahoney,” says co-owner Marcey Place. “She is a dear friend, former colleague and now business partner.”
Mahoney’s daughter, Sara conceptualized and designed the unique logo. The new owners hope ‘Sip’ is the perfect name to conjoure up images of a warm cup of coffee enjoyed in a cozy, beautiful Colorado setting.
For the past seven years, Place was the Starbucks Regional Manager, employed by Vail Resorts, to oversee three of their six licensed locations. Before that, she lived in Virginia with her family, and then the Washington D.C. area, where she was a store manager of a Starbucks in the heart of the nation’s capitol. Place’s husband, Will, is the manager at Howard Head Sports Medicine Clinic by day and Owner/Operator of AvantiServe, LLC by night, which is a espresso and brewing equipment service.

The family moved to Eagle Ranch at the end of 2007, and more recently, moved to Sky Legend in Gypsum. Place’s daughter, Olivia is a freshman at Colorado State University in Fort Collins, and her son, Gabe, is a sophomore at nearby Eagle Valley High School.
Place’s excitement for her new coffee shop radiates out of the curved bar set-up that characterizes Sip. In the future she hopes to include curbside service and a cozy hangout for high school kids on their late-start Wednesdays.
“We will provide a healthy and happy gathering place for all of our community members and out-of-town guest who may be visiting family in our area or on the road passing through,” said Place.
‘Sip’ will also offer breakfast and lunch items.
“We will provide wholesome and nutritious food and beverage options,” said Place.
