Five-course dinner takes place Wednesday at Manor Vail Lodge

VAIL, COlorado –Colorado is known for itsf microbrews and Chef Richard Bailey of Lord Gore Restaurants in Vail is known for his focus on local, organic food. On Wednesday night, these two come together for an outdoor dinner on the Fitz Lounge deck in Vail. The dinner starts at 6 p.m. and tickets are $45 per person.
“Wine pairings are so much more common but Colorado microbrews offer some terrific complex flavors that are excellent when compared with certain foods,” said Chef Richard Bailey of Lord Gore Restaurant and The Fitz Lounge, both located at Manor Vail Lodge in Golden Peak in Vail.
The event kicks off with Colorado Native Beer paired with lamb chops with roasted pepper-tomato vinaigrette. It continues with Blue Moon paired with coriander seared ahi tuna with wasabi mashed potatoes and stir fried vegetables. Next up is Boulder Single Track paired with jerk pork and mango salsa, followed by Mamas Little Yella Pils paired with rabbit rillet, pickled onions, cornichones and garlic crostinis. Finally New Belgium Abbey Ale will be paired with chocolate-covered bacon for dessert.
ChefBailey is a Sonoma, Calif., native who has earned his culinary chops in resort towns around the country, including Napa Valley, Sonoma and Sausalito, Calif., Nantucket, Mass., and now Vail.
