‘Food as Medicine’ workshop set for Oct. 15
VAIL, Colorado – With the harvest in full swing across the state, autumn is a great time to re-evaluate food choices and eating habits. The Vitality Center at Vail Mountain Lodge & Spa is going a step further in hosting a one-day workshop focused on nutrition for vibrant health. This Oct. 15 workshop, entitled “Food as Medicine,” features hands-on instruction designed to introduce participants to healthier options and more mindful methods of preparation. The workshop also highlights active options available at The Vitality Center and a chance to celebrate the beauty of the season.”This workshop is designed to arm participants with the information and know-how needed to change eating habits to experience a higher level of health,” said Lisa DeKoster, spa director at Vail Mountain Lodge & Spa. “We’ll also ensure that everyone enjoys a balanced experience by including fitness time outdoors and a healing restorative yoga practice.”Participants in the Vitality Center’s ‘Food as Medicine’ workshop will learn how to prepare organic, enzyme rich, nutrient dense food using a combination of live and low-temperature methods and recipes. The recipes are vegetarian and 100 percent gluten free, delicious and easy to prepare. The workshop is led by Eloise Nelson, Ph.D., a well-known holistic nutritionist with 35 years of experience practicing and teaching the benefits of proper nutrition.”Through this workshop we’re promoting vibrant health – one bite at a time,” Nelson said.Workshop schedule:• 8 a.m. – “Green Detox” Smoothie (lecture and demonstration): Make a delicious, satisfying, nutritious breakfast and learn the importance of enzyme nutrition and how it contributes to health and longevity. Understand how to support digestion and increase energy by soaking seeds, nuts and grains.•9:30 a.m. – Power walk: Get energized, breathe deep, and take in the beauty of Vail Mountain. •11 a.m. – Food as Medicine: Learn how to balance proteins, fats, and carbohydrates and what ratio is required to optimize individual metabolic type. •Noon – Lunch with Eloise: Learn how to prepare a low temperature vegetable soup and raw super green salad without steaming the greens and depleting vital nutrients. Enjoy a raw chocolate dessert high in anti-oxidants that will completely satisfy the craving for sweets.• 2 to 4:30 p.m. – Free time to relax in the spa solarium, sip on ginger tea, or receive a spa treatment.•4:30 to 6 p.m. – Restorative yoga: Restorative poses are the perfect antidote to stress and fatigue. Sometimes approached through therapeutic stretching and other times more deeply supported with props like blocks and blankets, this class has a particular ability to create a muscular experience in your body while nurturing and soothing.
