Fundraiser in Eagle-Vail will help sick mom

EAGLE-VAIL, Colorado – Karol Rubi said she dreams of being able to do more things with her 12-year-old son. That, she says, keeps her going as she battles a life-threatening autoimmune disorder. The 28-year-old Gypsum resident says she would use money from an upcoming fundraiser at Paddy’s to pay her medical bills.
Friends and family members have organized a fundraiser for Rubi Saturday night at the Eagle-Vail restaurant. A silent auction, door prizes and free appetizers are among the plans for the event. A portion of food and beverage sales will also go to Rubi.
Rubi has been in and out of the hospital since doctors diagnosed her with antiphospholipid syndrome 12 years ago. Her condition has caused blood clots in her liver and many other complications. She hopes to get on a list to receive a new liver, but her high blood pressure has been preventing her from getting clearance from doctors. Rubi hopes an upcoming surgery to remove her rotted, cracked teeth will help to improve her condition so she can get on the list.
She said she’s grateful for help from the community. Roger Villeda, Rubi’s stepbrother, said he hopes to raise $5,000 for Rubi through the fundraiser.
