The chicken with strawberries remains a signature item, but don’t be afraid to experiment with the Northern Italian menu. And since wine is the best condiment of all, pour a glass while you do.

Beaver Creek’s traMonti offers a variety of homemade pastas and sauces, in combinations both traditional and racy. Vail’s Campo de Fiori may be named for a serene field of flowers, but the atmosphere buzzes with revelry and toasts. Down valley a bit, Tavolaccio in Edwards serves unfussy homestyle Italian.
