Italian wine and barrel aged cocktail tasting in Avon

AVON – Vail Valley local Dave Meirowski of Tellitalia imports will pour Italian wines Wednesday night at Avon’s vin48 as part of the restaurant and wine bar’s weekly tasting series. In addition, Chris Stevens from Craft Distillers will show off his new line of barrel-aged cocktails.
Telluride based Tellitalia imports some of Italy’s finest wine. Tellitalia selects wines with respect for the families, tradition and agricultural heritage of its producers. Meirowski, the regional sales manager, will pour four wines from the Tellitalia portfolio including two wines from Chianti producer Cennatoio.
The Cennatoio estate is located in the town of Panzano, perched along the ridge that divides the Pesa River Valley (Val di Pesa) from the Greve River Valley (Valle della Greve), in the heart of Chianti Classico, and is considered one of the most important wine areas of the zone, let alone all of Tuscany. Just above the town, along the same ridge, is a villa that once overlooked the “Stinche Alte” prison of the Medici. Friends and families of inmates in this prison used to gather at this villa to send waves (cenni) to their loved ones in the prison below, and thus the site became known as “Cennatoio.” Leandro Alessi purchased the Cennatoio villa in 1971 as a country home for his family.
The second table of the tasting will feature a new line of specialty small batch barrel aged cocktails from Craft Distillers Fluid Dynamics line.
Craft methods of distillation means everything is hand-made. Every spirit represented by Craft Distillers is based on rigorous, old-fashioned, hands-on pot-distillation methods. This is about authenticity, personal attention, real ingredients and love of one’s work.
Stevens, the regional sales manager for Craft Distillers, will pour all four Fluid Dynamics barrel aged cocktails. The countries best bartenders are blending cocktails in tiny barrels and aging them for a couple of weeks. It’s what gave the guys at Craft Distillers the idea for Fluid Dynamics. The cocktails are aged in 55-gallon oak barrels for about six weeks. All the blending is done by the same people that distilled the spirits used in the cocktails.
“A good drink that is mixed and handed to you is composed of complex and distinctive ingredients,” Stevens said. “If you take the time to age those ingredients together in barrel, they merge into a richer and more harmonious whole. To our palate, the aged version is about four times as good as a drink that has been freshly assembled. Similar things happen to our whiskies and brandies in the cellar. When we prepare a blend, it takes at least two years, sometimes five, for the components to fully ‘marry.'”
