VAIL — Breanna “Bre” Burgess, of Hess Collection Winery, and La Tour Restaurant will host a wine dinner today, featuring four courses paired with Hess Collection wines.
Burgess is the southwest regional manager for the Hess Collection Winery and has been with the company for two years. She began her career as a wine sales rep for Beverage Distributors in 2010 and quickly climbed the ladder into her current role. She is a Level 1 sommelier with the Court of Master Sommeliers and is working toward Level 2.
The dinner opens with a rabbit empanada with pine nuts, black currants, goat cheese and green olive salsa paired with a 2013 Amalaya Torrantes Riesling blend from Salta, Argentina. The second course is soft-shell crab and early season corn custard with jicama salad paired with a 2013 Hess Collection chardonnay from Napa Valley, California.
Round 3 features roasted marinated quail with red chimichurri sauce paired with a 2013 Colome Estate malbec from Salta, Argentina, followed by grilled black angus strip loin with duck fat potato, kale, carrot and horseradish cream paired with a 2013 Hess Collection cabernet sauvignon from Allomi Vineyard in Napa Valley, California. A selection of petits fours completes the meal.
