Larkspur’s Vinoversity shines light on the venerable Bordeaux

VAIL ” Larkspur Restaurant’s Wine University continues this week studying the luxury of Bordeaux, France’s oldest growing region and producer of famous wines. The class begins at 6 p.m. on Thursday and will be hosted by sommelier Kevin Furtado and Bordeaux importer Tom Lane.
The history of Bordeaux dates back thousands of years, and it is often considered the mecca of the wine world. Its diversity of microclimates yields a multitude of distinct appellations, each unique in terms of terroir (soil content) and climate. As true Old World wines, Bordeaux are distinguishable by where the grapes are grown.
Wine University will discuss the appellations of Bordeaux, the ‘Crus Classes’ (or classed growths) and the historically famous chateaux. Six wines of recent vintages will be blind-tasted, allowing students to develop their tasting technique using all five senses. The increasing prices of recent vintage Bordeaux make these wines extravagant indulgences.
Next week in a special Wine University addendum, Larkspur bar manager Josh Stevenson will lead the “Magic of Mixology.” In this fun and amusing seminar, Stevenson will teach the mastery of cocktails for special occasions or anytime. Seating is limited.
Coming in August, Canyon Wind Cellars winemaker Jay Christianson will present his leading Colorado wines with a multi course dinner specially paired by executive chef Armando Navarro. The date and time of this additional Wine University event will be announced soon.
