Lodge at Vail adds top chef

VAIL The Lodge at Vail’s food and beverage department has added Executive Chef Mark Chmielewski, who joined the Lodge at Vail team in June. Chmielewski said he is looking forward to adding his influences to the American cuisine of the Lodge at Vail’s award-winning restaurant, The Wildflower, as well as the hotel’s Tuscan-style restaurant, Cucina Rustica.”We are very excited to have Mark on the leadership team,” said Paul Cardona, director of food and beverage for the Lodge at Vail. “His excitement and passion of food and wine will undoubtedly take the guest experience to new levels.”Chmielewski has 18 years of restaurant experience. Beginning his career at the La Caravelle Restaurant in Manhattan, he also worked at Le Panrtiere Restaurant in Rye, N.Y., Le Cirque Restaurant in Manhattan and The Signature Room in Chicago, where he served as executive chef. “The Lodge at Vail has traditionally been at the forefront of fine cuisine here in the Vail Valley,” Chmielweski said. “I look forward to carrying on that tradition in not only our restaurants but our banquet facilities as well.”When not in the kitchen, Chmielewski likes to play softball and spend time with his wife and two children.For reservations and operating hours for The Wildflower Restaurant or Cucina Rustica, call (970) 476-5011.
