Luigi’s Pastahouse will open in Eagle May 7

Luigi’s Pastahouse will open in Eagle, Colorado, May 7. The new restaurant will be across the street from the Capitol Theater.
Luigi’s, owned by Dusty Boot owner John Shipp, will be open 4 – 10 p.m. seven days a week, and is advertising itself as “moderately priced classic Italian cuisine with family-style service.”
Luigi’s will also feature “community table” dining, in which family-style portions are served larger parties, or will seat smaller groups together who want to mingle while they eat.
Because it’s owned by the same people who own the Dusty Boot, that restaurant’s “Boot Card” customer loyalty card will also be valid at Luigi’s.
