Marko’s Pizzeria, Edwards, Italian
Vail CO, Colorado
Marko’s is known for its pizza, which has a nicely chewy crust and a magical proportion of cheese to toppings. But everything is good at the Italian joint, especially the pastas. Owner Mark Esteppe is in the kitchen most days. He doesn’t serve fancy food, but everything’s homemade and has withstood the test of time – and families. He buys fresh basil by the pound, simmers his marinara sauce for hours, and wouldn’t be caught dead with powdered cheese.
Lay of the land
Mark is a laid-back individual who loves to play outside. Summers are for golfing, and winters for skiing. His staff takes after him, giving the restaurant a lighthearted feel. The walls are a hodgepodge of murals and vintage signs. It all adds up to neighborhood ambiance.
Watch out ” they have dangerously cheap drinks. Mark calls it the 2-3-4 plan: $2 Coors Lights, $3 Heinekens and $4 Jaeger shots. Wines by the glass and bottle are also available, as is refreshing lemonade.
The shrimp scampi is a good summer meal, with a lemon butter sauce and Tiger shrimp. Served over angel hair pasta with parmesan cheese, and it’s a light option for these hot summer days. If you want to go even lighter, try one of the enormous salads, crunchy and fresh. The Greek salad is a long-time customer favorite with good reason.
They deliver in Edwards, and they adore big orders. So sit back on your own couch and enjoy dinner without the dishes.
