Matsuhisa in Vail celebrates grand opening

VAIL, Colorado – This holiday season skiers and snowboarders have something else to celebrate in Vail – the grand opening of the new Matsuhisa restaurant located in the lobby of The Solaris Residences in Vail Village. Chef Nobu Matsuhisa, one of the premier chefs of Japanese cuisine, will be in Vail over the holidays to celebrate the opening of the new restaurant.

“It’s an honor to have Nobu join us to open the Vail restaurant,” said Todd Clark, director of operations of Matsuhisa Vail and Matsuhisa Aspen. “This is his 29th restaurant, but only the fifth to open with the Matsuhisa name. Vail now joins a select group of luxury destinations to offer a Matsuhisa experience.”

Other Matsuhisa restaurants can be found in Beverly Hills, Aspen, Mykonos and Athens, Greece.

Matsuhisa Vail features Japanese and Peruvian fusion cuisine created by world-renowned Chef Nobu Matsuhisa. Kitchen Manager Sean Baek makes Nobu’s vision come to life daily at the Vail location while Head Sushi Chef Toru Watanabe presides over the restaurant’s white oak sushi bar with Nobu-designed sushi cases.

Menu items include yellowtail jalapeno, tempura rock shrimp with creamy spicy sauce, tiradito-style sashimi and grilled Colorado lamb with anticucho, a Peruvian chili sauce. A Nobu-inspired dining experience wouldn’t be complete without his well-known miso black cod, which is marinated in miso for 48 hours before being broiled.

The Matsuhisa Vail location features more than 6,600 square feet of dining space to accommodate 225 guests in the restaurant, at the sushi bar and on the patio.

The restaurant opens daily at 5:30 p.m. for dinner. Reservations are recommended and can be made by calling 970-476-6628.
