New catering company opens in Vail Valley

VAIL, Colorado – Local restaurateur Marc DesRoisers has announced the launch of Big Delicious Catering in Vail, a full-service catering company featuring cuisine prepared by Executive Chef Hunter Smith. Big Delicious specializes in locally sourced, fresh ingredients and caters at venues, residences, event facilities, corporate offices and other areas throughout Colorado. Its event planning includes working with local and regional business for event styling, floral design, transportation and a variety of other event needs.
DesRoisers, who owns and operates Happy Valley Grill at the Vail Golf Club, has more than 17 years in the catering and restaurant business. DesRoisers worked with Epicurean Catering from 1995 to 2000 and then, in 2000, he debuted Whirled Peas Catering in Denver. As co-founder and president of business development with Whirled Peas, he earned recognition by the Denver Business Journal as one of the Top 40 Under 40 in 2003, Best Caterer in Denver in 2006 and was featured on the Food Network’s Fantasy Weddings in 2006.
In 2007, DesRoisers and his wife moved to Vail, where he continued to work with Whirled Peas until opening Happy Valley Grill at the Vail Golf Club in 2007, which he will continue to operate alongside Big Delicious.
“Opening Big Delicious Catering was a natural evolution for me and my family,” said DesRoisers. “I’m thrilled to be working in the catering business again and working with Hunter to provide the Vail Valley and beyond with fantastic events and cuisine.”
Smith has 13 years of professional chef experience, most recently working as sous chef for Restaurant Kelly Liken in Vail and also appeared on the Food Network’s Iron Chef America with Liken.
“I’m looking forward to sharing my love of cooking with our clients,” Smith said. “With fresh ingredients, spices and aromatics, I will create menu options that are light, healthy and, most importantly, delicious.”
A sampling of menu choices available from Big Delicious includes roasted beets with fresh mint, pea shoots and saffron oil; lobster profiterole, celery salad and tarragon cream; sliced herb crusted beef tenderloin with a dollop of truffle aioli and chervil; fig glazed lamb sirloin with braised fennel, exotic mushroom ragout and presented with a pinot noir reduction; grilled wild salmon served with quinoa pilaf and baby tomato ceviche; braised short ribs served with whipped creme fraiche potatoes and grilled asparagus; house made tiramisu, mascarpone creme and shaved chocolate; and granny smith apple tart drizzled with salted caramel sauce.
