New crepe stand pops up in Vail
VAIL — Vail locals and guests will have a new grab-and-go and late-night dining option beginning in early February. Crespelle, Italian for crepe, is a new “pop up” restaurant concept slated to open Feb. 4 in the space formerly occupied by the Ore House in the Gorsuch building just over the bridge on Bridge Street. Crespelle will serve a variety of crepes, coffees, beer, wine, cocktails and apres drinks daily from 7:30 a.m. to 11 p.m.
“Crepes are the perfect ‘grab-and-go’ food for fueling up on the way to the mountain or work, and our menu offers both sweet and savory types. There will be something for everyone,” said Anthony Mazza, head chef at Crespelle. “We will also provide excellent food and drinks for recharging after a long day on the mountain or late night. Crepes are tasty and portable and there is nothing like Crespelle in Vail Village or Lionshead.”
Mazza, classically trained in French cuisine, knows the Vail Valley well having worked at such Vail and Beaver Creek staples as Kelly Liken, Mirabelle and Larkspur before starting his own private chef business six years ago.
“We are very excited to bring this concept to Vail,” said David Segerdahl, managing director of Elevation Vail Partners, a local investment and startup company. “Pop up restaurants, like food trucks, are extremely popular and provide diners with new and exciting food and beverage options in an energetic and dynamic environment.”
Elevation Vail Partners acquired the lease for the old Ore House space in mid 2014 and is currently working on a new and chic restaurant and bar concept that they hope to launch in mid 2015. In the meantime, Segerdahl and his partners saw the opportunity to try a pop up concept in the space during the 2014-15 ski season. Crespelle will occupy the front portion of the indoor space with seating on the patio.
‘IN THE HEART OF THE ACTION’
“We fully expect this to be a hit with locals and guests,” added Segerdahl. “If we are correct, Crespelle will find a new Vail Village or Lionshead location after this ski season to make way for the new restaurant. In the meantime, we are looking forward to serving great food to people on the move and who want to sit and enjoy one of Vail Village’s quintessential patios in the heart of the action of Bridge Street.”
