If you’re looking for a taste of Mexico, especially from the Monterrey region, check out El Sazón in Eagle. Chef and owner Rafael Garcia pours his passion for flavor into every bite as he takes recipes from his own family and shares them with you.
The word sazón in Spanish means “seasoning,” and your taste buds will have plenty of flavorful dishes to choose from on the menu. Garcia trained in the culinary arts for five years in Monterrey, Mexico, and had a food truck in Gypsum before the space at 701 East Chambers Avenue in Eagle opened up. The location formerly housed another Mexican restaurant, Fiesta Jalisco.
“The more that I get to know Chef Garcia, I learn that cooking and creating things with the best ingredients is 100% his passion,” said Tania Sandoval, who is the manager at El Sazón.
El Sazón has plenty of traditional plates like chicken mole, Monterrey steak and seafood molcajete. It also offers fajitas, Tex-Mex, burritos, even a Mexican fettuccine.
Sample the goods by ordering the taco platter, an eight-piece serving that includes chicken, al pastor, carne asada and carnitas.
“That’s a very popular dish for larger groups and people also love our combo platters, where you can pick from your choice of tacos, tostadas, tamals, chimichangas, enchiladas and more and all combos include rice and beans. It’s a ginormous portion,” Sandoval said.

For starters, order the guacamole, which is prepared tableside in a molcajete. Uplevel your shrimp cocktail and go for the Monterrey cocktail, complete with octopus and one leg of king crab. El Sazón even has bone marrow on the appetizer menu where the bone is cut in half with the bone marrow in it and it’s served with tortillas, rice and beans.
“The bone marrow is very popular. I think it’s so extravagant and not a lot of people have tried it. So, when they see it on our menu, they go straight for it,” Sandoval said.

If you miss Taco Tuesday, El Sazón has you covered with specials for Taco Wednesday. “We like to offer it on a different night in case you can’t make it out on Tuesdays,” Sandoval said.

The same kind of care and passion that goes into El Sazón’s dishes also goes into the drink menu. Look for fresh ingredients like dragon fruit used in the Dragon Margarita made with Casa Dragones tequila. Or sip on the brand-new cucumber and jalapeño margarita.
“People love our margaritas,” Sandoval said. El Sazón also offers mojitos, martinis and many more delicious, handcrafted cocktails. One of Sandoval’s favorites is the espresso martini.
El Sazón is open daily at 10 a.m. and will stay open until 9 or 10 p.m. depending on how busy they are later at night. Sandoval said the support from the community has been amazing.
“We are so extremely thankful for our customers sharing their posts on Facebook and especially all of our locals here. They just keep spreading the word,” Sandoval said. “Everything we do at the restaurant is done with such passion, and when you come here, we want you to feel at home, we want everyone to feel welcome and comfortable.”
