Ocotillo is a high-end Southwestern steakhouse with a flair for the dramatic. The lively, colorful fare takes center stage in the dining room. After a day of hiking, biking or a round of golf, there’s nothing better than sitting down to a nice cut of beef. Ocotillo offers only USDA prime beef and Kurobuta pork chops. That means the cuts offered at Ocotillo are the “tops of the tops.”
Ocotillo’s Executive Chef Mercer Mohr suggests the chef’s tasting menu. Diners selecting this option can expect a variety of dishes, all served on smaller plates so everyone can taste each offering. Everyone at the table may order their own entree and then let the fun begin as several different dishes start filing out, complete with a little sweetness at the end.
The featured entrees are complemented by other menu favorites including Colorado rack of lamb, carne asada, Icelandic salmon and baby back ribs. All the meats are prepared with a dry rub, making them unique and flavorful. And to give a boost of earthy decadence, the steaks at Ocotillo are served with black truffle butter.
Not only does Ocotillo offer the finest steaks and chops, the restaurant also features an Angus beef burger with bacon and cheddar cheese, a Kobe beef burger with truffle cheese and wild mushrooms, a Hawaiian ahi tuna burger with the chef’s special green catsup and a turkey burger with cranberry relish. All burgers are served on a fresh brioche bun.
Try the arugula goat cheese salad and the baby back ribs for starters, which come with a smokey mango barbecue sauce. For a lighter flavor, try the Cuban panini: pulled pork, smoked ham, sweet pickle, mustard and queso blanco. Or try the Hawaiian poke tuna ” cubed fresh ahi tuna with ponzu, avocado and lotus root chips.
