Planked bourbon salmon recipe
Vail, CO, Colorado
2 tablespoons plus 2 teaspoon whole grain mustard
1 tablespoon bourbon
1 1/2 teaspoon brown sugar
1 teaspoon chili powder
Salt and pepper to taste
4 – 6 oz. Salmon Fillets or 1 1/2 pounds salmon
1 – 15″ Fire and Flavor Cedar Grilling Plank, soaked
Combine mustard through chili powder in a small bowl; season to taste with salt and pepper. Brush mixture evenly over salmon and allow to sit for 10 minutes at room temperature. Meanwhile, preheat grill to 350-400 degrees, place plank on grill and close lid. Allow plank to heat for two to three minutes or until a light smoke develops. Flip plank with tongs, place salmon on heated side of plank. Grill, with lid closed, for ten to twelve minutes or until salmon is medium well. Remove salmon and plank from grill and allow to rest for 3 minutes before serving. Cooking times vary according to thickness of fish. Serves 4
