EDWARDS, Colorado ” What’s American cuisine? Kelly Liken and Rick Colomitz can fill you in. The dynamic duo behind Vail’s Kelly Liken restaurant has just opened Rick and Kelly’s American Bistro in Riverwalk, and it is unapologetically kick-back American.

Warhol soup cans adorn the walls, Chuck Taylors are part of the uniform and Rubik’s Cubes ” seriously ” are on every table. But that’s all window dressing. How’s the experience? It’s fun.

‘Kelly and I are passionate about creating a neighborhood gathering place,’ Colomitz said.

That it is. One of the few places that cap-italizes on its riverfront location, there’s no better patio to be on in the summer. The menu is conducive to all kinds of eating habits: apps with the girls, go-big burger night, get-in-and-out dinner with the kids and even the traditional starter-entree -dessert trilogy. This particular space has seen many incarnations, but Rick and Kel-ly’s seems to be channeling the spirit of old favorite Zino while recreating it into a new vision entirely.

While American, the menu is also interesting. No fried calamari or seared tuna sashimi here. Try the cheesy poofs, a traditional French gougere, or cheese cloud, that becomes intensely Col-oradan thanks to the South Park name (cheesy poofs are Cartman’s favorite) and the fact that they’re amazing with good beer.

The tempura green beans starter is a true vice, and will quickly become a valleywide addiction thanks to the over- the- top pungent and garlicky aioli.

Eventually the restaurant will serve lunch, though for now it’s dinner only. The bistro’s official grand opening is Friday and will include live music from Laughing Bones.

Word has it the restaurant will be open today, too.
