Daily Staff Report

223 Gore Creek Dr., Vail970.476.2828The SpaceSapphire has a neat, modern dining room with an urban feel to it. But for summer, the action is on the terrace. Located on the second story, Sapphires terrace overlooks Gore Creek, making for a truly memorable dining experience weather permitting. The FoodChef Peter Millette serves up an eclectic dinner menu that relies on classic French cooking with a few twists in the Asian and Southwestern veins. A signature app that keeps them coming back is a dynamite tempura asparagus coated with bonito and nori. Other must-try starters are the Tuna Nachos and fried calamari with Thai chile sauce. For entrees, you cant go wrong with Sapphires famous pistachio-and-poblano chile-encrusted N.Y. steak or the miso-marinated yellowfin tuna with wasabi cream and sweet soy.DrinksAlong with the usual, Sapphires resident mixologist likes to have fun with a cocktail. Loosen up with a lemon-drop martini or a specialty cocktail like the Bird of Paradise or turn to the exemplary wine list. Dont MissVails only oyster bar. If you like em raw on the half shell, this is the place.A bit of historySapphire is a family-run restaurant, owned and operated by Susan and Joel Fritz, daughter Amy and Chef Millette. After relocating from Lionshead five years ago (the former Uptown Grill), Sapphire has established itself as a top dining spot in Vail with one of the best decks in town. The level of attention diners get from the on-site owners is one of the reasons Sapphire is a favorite among visitors and locals alike. Vail, Colorado
